ISSUE SUMMARY:
in the regular demo of Joomsocial there is this position (attached). Can I add this in Socialize?? also I would like it to show different modules depending on the page you visit. is that possible?

Actually that is not a module, but a jomsocial application, which you can configured it from "Costumize my Page"

for jomsocial applications, you only can set the position on sidebar top, sidebar bottom and main content of your profile page

how do i get to this pages?
how do i set the default for this?
Each user has power to manipulate this? can they be restricted?
please point me to the part of the documentation that explain all about this.

You can go to this page after login index.php?option=com_community&view=profile&task=editPage

if you wanna set the jomsocial apps as core you can do it from Plugin manager, just search jomsocial plugin edit each plugins and set as core app.
