I have a User Group called Old Users who are added to this new site under development from another site.
We have a lot of old posts to add to these profiles before the site goes live.
The question is:
- How can we remove the stream time from posts from users in this user group untill a certain date, when the site goes live
or:
- is it possible to add a publishing option, like date created (the publishing date from the old portal) so all posts don't appear to be published at the same time?

No, you can't remove those dates and activities are not articles so they won't have similar options ^^.
You may:
- change time from fixed to lapsed in Backend -> Component s-> JomSocial -> Configuration -> Layout -> Display Settings -> Activity Stream Date Style
- or manually change those dates in datbase
