ISSUE SUMMARY:
Hello,

On my "Status field" it always defaults to Filtered by "All Streams", I have been getting a lot of feedback by users on this and they want the default to be Filtered by "My friends & I" . How can I set it up so that all users have the default filter set to My friends & I?

Also why does it show other users that you do not know? We are testing our site and have test users showing up on regular users streams. I am just curious about the second part and want to be able to fix the main default so that our users are only seeing what they put on their streams and friends.

for default filter you can change the settings at:
jomsocial backend > configuration > layouts, and set Default Frontpage Activity Filter to User & Friends.

about "it show other users that you do not know?". because that stream from other users with public privacy. please set Default Frontpage Activity Filter to User & Friends.
