Basically I am planning to remove the avatar from the jomSocial template and have it placed in the header of the page.
Either using a module, in a module position or loading it directly in template.

Could someone point me in the right direction to achieve this?

I am sorry, we cant help you with this.. to create new module is not easy, but if you wanna remove the avatar on profile page, it would be easy, use this code :

.joms-avatar--focus.joms-online a img {
    display: none;
}

I was actually looking for some sort of documentation or guidance to which files to edit.
I managed to create the module myself. See attached in case someone else needs it.
