Hi Juan,

you can add it at:
/components/com_community/libraries/fields/countries.xml put this code after line 3:

<country>
	<name>COM_COMMUNITY_LANG_NAME_ENGLAND</name>
	<code>COM_COMMUNITY_LANG_CODE_ENG</code>
</country>

and but the new language string at:
/language/en-GB/en-GB.com_community.country.ini
COM_COMMUNITY_LANG_NAME_ENGLAND="England"
COM_COMMUNITY_LANG_CODE_ENG="ENG"

FYI: maybe I give you wring country code, you can correction it.
