I've recently started a project that requires ability to search within JomSocial members 'About Me' text fields, so that potential customers can locate members profiles based on that member having a specific trade or skill.

Ie; I'm looking for a plumber, so I want to be able to search through profiles containing the term plumber in the 'About me' under a custom text field entitled 'Trade'

Is this possible or achievable?

I was actually looking for something more specific, for example I'm aware one can search that way, however I need to be able to list the trades entered and be selectable from a drop down list, so users can select which trade they want from the entries entered in the TRADE field on all users profiles. In effect I need something that can list all entries added into the TRADE field and present them as part of a form drop down selector.

I'm aware that this is a customisation, however I'm trying to create the form myself, but want to know if I can read from and list the stored database entries. This is a merely a question of feasibility, rather than a request to actually create this customisation. Sorry for any previous confusion. This is definitely a learning curve for me.

You should look at the #__community_profile_fields_value for this and this is really tricky, I cant help you further.. if you want you should hire the assistance for this.
