Because 100% of our customers are located in France.
How can we set by default FIELD_COUNTRY set to "France" when users fill up their profile ?

you can do it by using override ( documentation.jomsocial.com/wiki/Customizing_Template ) for:
/components/com_community/templates/default/register.profile.php
put this code at the bottom off page after "?>"

	joms.jQuery(document).ready( function(){
			joms.jQuery('select').val('COM_COMMUNITY_LANG_NAME_FRANCE');

Hi,
we've tested your changes, unfortunately we still have the same issue, user have to select the country in his profile, default country "France is not set as the default one.
We've put the modified file under root/template/socialize/html/com_community.
Can be seen on our live site, just log with user jules, password same as described for JSupport the go to "Mon profil/Modifier mon profil".
We would like for each new user that his country field's value will be set to "France". Perhaps it's in relation with:
components/com_community/libraries/fields/country.php ?

I made the overide and put this code

we are going to test it.
BTW do we still need to keep the override for register.profile.php ?

register.profile.php is a for step 2 in registration process. seem your registration process only have 1 step. you can delete that override.

now at the front end country got the default value as expected "France".
But at the backend through JomSocial/Monitor/members we've got not default country we've "Choose the country". Shouldn't we get "France" also ?

I think we no need it at backend. because the backend value always follow frontend users it self.
