For the male/female option, you can create the new fields in the Jomsocial > Profile > customise profile > Gender prntscr.com/ia9gvj
If it's not present you can add new fields.

You are using Multiple for Male and Female.
Multiple means it uses two different registration form.

Multiprofile means user have the option to select profile type.
If you simply want to add a field in the registration form you have to go > profile > customise profile.

You can set the different watermark only for a different profile from Jomsocial > Profiles > Multi profile options.

You can change the default profile pic and covers from Jomsocial > Theme Designer > Profile options.

This will work default for All profiles, not based on multi-profile. In Multiprofile you can set different registration fields based on your profile types.
