I need to know how to create the gender "couple", and let the 2 members of the users put their data individually.

I'm sorry but you can't use predefined field gender and extend it for another gender.
At least it couldn't be done easy - you'll need to customize core files.
You may use a regular dropdown field and add more options.
The drawback of this solution is that demographic data will be no longer gathered.
Also if you want to have dynamic fields - so if someone choose "Couple" then it loads additional fields - can't be implemented easily.

Please, consider to hire a professional developer who could help you with those customizations.
