to restrict the date range you can edit the birthdate field and set it as the image below. This will then only alow 1985 as the youngest date for registration

you can add any extra fields as you wish using the customise profile options but you cannot add a 3rd gender to the gender field. it must be done as a a new select box. it is not possible in ad agency

there is a product called profile types from Readybytes which i think may do what you are wanting but it IS NOT compatible with Jomsocial 4 yet. they are actively developing it to work with the current version but at the moment it doesn't
