Which way is better and recommended?
1- using FFmpeg (VPS Security comes down)
2- using Zencoder (requier to enable function php.ini = exec,system,....)?

That is depend, if you wanna use zendcoder you should pay extract cost to zencoder, but with zencoder your server will work faster.

User FFMPEG is common solution, that will be easily to fix the the issue if you have any.

1. yes, you should enable one of them, you should not enable all function
2. yes, all files will be stored on amazon
3. I am sorry this is not possible, you should use it on same server

if use amazon s3 (video or file or image or etc)
for example :
1- (first) i using my server (video , image ,...)
2- (next) i using amazon s3, and Old files (video, or image , or ...) in local server
support jomsocial both amazon s3 and local server simultaneously? or support one stroge for load files (video , image , etc)
i using both stroge : amazon s3 in the future , and use local server (old files)

all file (video or image or ...) will be transfered amazon S3 , if video storage or image storage or files storage to amazon s3 , that time will be transfer to amazon?
no missing files? Because maybe low speed internet or dc server for 1-5 minute

will be transfered by queue, it wont be transfered at once, or your server will die :)

1. No, you should transfered them manually we dont have feature to download from amazon S3 to your local
2. depend your setting, you can see the configuration from jomsocial configuration->remote storage
3. yes this is depend as you want, that is not a problem if you wanna set video on local server or image on amazon S3

1. no need it, but you should enable the cURL
2. as long as you keep it secret it will be safe :p
