I am slowly rebuilding my site using some space I have from an old site. My intention is to move everything to the correct location once I have worked it all out, just as well as I am floundering with the Video side of Jomsocial. I have provided my info below for the development area.
I am totally unfamiliar with ffmpeg but it is active on my server. As far as I can see I have entered everything I should when I installed JomSocial but the video's will not process. Can you help?

Upgrade JomSocial to current stable version -> JomSocial 3.2.0.1
Please contact to your hosting provider and ask if ffmpeg is installed and for correct path to it.
Then run cron manually or set cron job.
I uploaded avi file so we'll see if it's converted.

Sorry, my computer bit the dust and even though it isn't fixed yet I have managed to dig out one that I would rather not be using to get back to work again.
I am now trying to use Zencoder/S3 but am having little success there either. I have followed the "How To" Video four or five times but I think I am missing something in the setup of Zencoder and S3 that is not covered in the Vid.

To be honest I shouldn't do that... but I configured it for you so now videos are converted.
Now all you need to do is to activate Zencoder account and disable Integration Mode.

I am sorry to bother you again old man but for reasons that don't need discussing here I have had to change my site around and have somehow found that I can no longer upload/process videos.
Can you tell me exactly what you did last time to fix my problem?

Well I just entered proper values to configuration fields.
You're lucky :) My browser saved values for this fields so it was easy to enter them again.
I uploaded test video and it was converted and exported to Amazon S3... so it works :D
No you'll need to set cron job or run it manually:

This time you forgot or missed to enter access data for Amazon S3 configuration ^^
Zen coder and Amazon services are configured so just note somewhere keys and names for that services.
I don't understand because Zencoder and Amazon S3 were already configured from before, nothing changed there but having made a huge mistake and damaged my database I had to start again. I don't see exactly what I am missing or what I need to do to fix it.
I am feeling pretty dumb right now.
