A lot of the plugins are branded with JS, jom social , etc. how can you remove this text ?

you can changing it by using language overrides, goto joomla backend > extensions > language manger, select overrides at left section, select filler to administrator language, click new, and search and edit it.

For twitter desc, you can override this string :
