We would really like to keep the look, feel & functionality of our site consistent - we display information about music tracks in a litebox which is an external script - cheekily, we have been able to display comments relating to the track (or video) with some copying of the mark-up from the activities stream and using a custom database call. This allows us to display the comments that are entered on the activity stream but not to write them (or display likes etc.).

How would I achieve actual integration and use activities.stream.php? And to call "$this->load('activities.actions');" (bottom of activities.stream.php) to create a functioning

<div class="cStream-Actions clearfix">
and
<div class="cStream-Respond wall-cocs" id="wall-cmt-000">

section in my litebox?

not easy to achieve that, too much effort. because the activity actions script is too complex. if the script call at profile or frontpage it might be got some conflict, because on that page already have activities stream. you can try it from activities stream module, maybe it can help you.
