I'm setting up my site on a test-drive subfolder of another domain, and plan to move address and probably host once everything is ready. Would I be able to easily redirect my facebook connect app on fb's end once I do this? Or should I leave FB connect till the later on in the process?

To be honest I didn't try it do that, but I think all you need to do is changing the url in Facebook API configuration.
