ISSUE SUMMARY: A few months back I updated the frontpage-image-default.jpg. I got it as close to the original as I could (798px × 469px). And it seemed to work fine. But for some reason it keeps re-cropping the image. Is there a way to resize the container to fit the image and how would I do this? Thanks

Because your site layout for hero banner is 912px x 342px, so you need to change your frontpage-image-default.jpg to 912px x 342px and not 798px × 469px :)
for prevent cropping, you need to make container high equal with image portion.
