I would like to change some of the fields on the registration form to be "not required" such as address and birthday. I don't think some of these need to be required.

But I cannot find in JomSocial where this is required. I cannot find a registration module or plugin.

please navigate to Jomsocial bakcend > Profiles > Customize Profile, you can setup it from here by check/uncheck "required"
