i'm a web developer, so i'm not asking to make this job for me :) , but since i dont know jomsocial at all I'm asking some advice for doing that "update-safely" i dont want to repeat the edits each jomsocial, socialize, or t3 framework update!
what's the better way to override the user list view?

I think you need modify the module "Community - Members Module" (modules/mod_community_members/tmpl/default.php)

And to avoid re-work after upgrading you can put the module as override template in socialize, please read here for how to override the module docs.joomla.org/How_to_override_the_outp...rom_the_Joomla!_core

However some customization of the user list (like add some user fields) should be allowed in backend..

The more i know jomsocial the more i like, and i like the documentation, i like core code easy to any customization.
I like less the poor backend customization possibilities (compared with some other joomla social component), i'm a developer and for me isn't a big deal, i can do what i want with the code (and your guide), but for the customers who doesnt know at all php it could be very frustrating.

how can i retrieve the var i need from it-IT.com_community.country.ini?

Can you make sure this file it-IT.com_community.country.ini is available and the strings are correct? you can debug this language issue, edit your joomla configuration and debug language, let me know what do you get?

I suggest you upload your site to the live server, so we can inspect your issue directly.. if you still work on local hard for us to solve this.
