on the registration Process Jomsocial is sending the username and the passwort in realtext
example
username: michael müller
paswort: clear paswort

We must deactivate this asap

Yes, password is sent to user during registration.
If you want to prevent this:

Browse to Backend -> Extensions -> Language manager -> Overrides and add:

Constant = COM_COMMUNITY_EMAIL_REGISTRATION_ACCOUNT_DETAILS_REQUIRES_ACTIVATION

Text = Hello %s,\n\nThank you for registering at %s. Your account details are as follows:\n\nUsername: %s\nPassword: provided during registration\n\nOnce you have completed the rest of registration process, you will receive another email with an activation link.

From now on password will be not sent.
