It there a way to create lists of for example all the different cities, companies, or colleges the members have written in their poliles, then when you click on i.e University of San Francisco you get the list of users like you get when you click on the schools name in a user profile (search/field?FIELD_COLLEGE=University%20of%20San%20Francisco)
But this is default behavior - when you click on value in profile (About me) - search query is created and list with profiles that have the same value in that field is created.
It will be list of ALL community users, not only friends.

What we are looking for, is a way to make lists of different fields such as schools or companies, so that it would be easy for a user to see all the companies represented in our community.
I was thinking something like this (where the number shows how many members we have from that school, and clicking on the name will show the list you are referring to)

Use advanced search and in field you're interested type "Abilene Christian University". This will search all users that have this value in field. Then - of you did it as Super User or Administrator - you'll see a save button nech to search button (on result page). This button allow you to save this search result list as link in menu. So after you save it - when user click on it, list will be displayed without need to type inn anything.
2. Hard:
You'll need to create a custom module that will load data directly from database and display active links with counter. You'll (probably) need professional developer to do this:
