Hi,

for changing About Me you must copy:
/components/com_community/templates/jomsocial/layouts/profile.about.php
to
/templates/[your site template]/html/com_community/layouts/profile.about.php

after that you can customize that file.

you cant replace about me with other one, because that part of core files. if you want to add new one. you must create new community plugins:
/plugins/community/
please have a look that plugins to learn the code, so you can create new one.

Would like to use JS member profiles instead of Sobipro entries.
So there are a number of things we would like to include...

1. A reservation form tab - opens up a reservation form.

2. Reviews - Don't know if there is a recommended reviews add on?
Or a way to filter reviews posted to their wall?

what do you mean with "Review" jomsocial doesn't have this things. but still you need to build the plugin for this.

jomsocial support not able to build the plugins for customer site. this beyond of jomsocial support.

for creating jomsocial plugin, it's same for joomla plugin. because jomsocial running under joomla:

you can see some plugins code at /plugins/community/

my suggestion, better you hire web developer for build that plugin.
